How to replace mayonnaise when dieting or fasting

Now ongoing Petrov Post 2022, during which Orthodox believers adhere to many food prohibitions. UNIAN will tell you what can be added instead of mayonnaise to salads and main courses, as well as how to make lean mayonnaise at home from simple ingredients.

Sour cream with mustard instead of mayonnaise

  • boiled yolks – 2 pcs
  • sour cream – 200 gr (at least 20% fat)
  • Dijon mustard – 1 tbsp
  • salt pepper

Grind the yolks with sour cream, add the rest of the ingredients. Beat with a blender for a more airy texture. Serve ready-made sauce for dishes or dress salads with it. It is better not to leave the sauce in the refrigerator, but to prepare a new one each time.

Bean sauce – almost like mayonnaise

  • canned white beans – 200 gr
  • lemon – 1 piece
  • sunflower oil – 70 ml
  • mustard – 1 tsp
  • salt pepper

Drain the liquid from the jar of beans, beat the beans with a blender until puree. Cut the lemon in half, drain the juice from one half, and put the whole pulp into the sauce. Add oil, mustard, salt and pepper, beat the mass again with a blender.

Sauce with horseradish and garlic

  • sour cream – 200 gr
  • horseradish – 2 tbsp
  • garlic – 3 cloves or 0.5 tsp garlic powder
  • salt pepper

Grind horseradish and garlic, mix with sour cream, salt and pepper until smooth. Chopped herbs can be added if desired. Place in the refrigerator for 30 minutes, then serve with meals.

Lean mayonnaise in brine from peas or beans

  • legume liquid – 150 ml
  • sugar – 1 tsp
  • salt – 0.5 – 1 tsp
  • lemon juice – 1 tsp
  • vinegar – 1 tsp
  • vegetable oil – 350 – 400 ml.

Pour the liquid from the jar into a blender bowl, add salt, sugar, vinegar and lemon juice, beat thoroughly. Continuing to beat, pour in 350 ml of oil in a thin stream. If you see that the sauce is too thin – pour in more oil and adjust the consistency. Keep in mind that if you use red beans, the sauce will take on a reddish tint.

Lean mayonnaise with flour

  • wheat flour – 80 g
  • water – 375 ml
  • vegetable oil – 60 ml (4 tbsp. l)
  • lemon (for juice) – 1 pc. (1-2 tbsp juice)
  • mustard – 1-2 tbsp. l (20-40 g)
  • salt – 1 tsp without a slide
  • sugar – 1 tsp without a slide

Sift the flour into a saucepan, pour in 100-150 ml of water and mix thoroughly so that the flour is completely dissolved. Add the rest of the water and place the saucepan over medium heat. After boiling, cook the sauce for 1 minute, stirring, until thickened. Then remove from heat and cool at room temperature.

Squeeze lemon juice into a blender bowl, add salt, sugar, oil and mustard. Beat until smooth, then, adding flour tea leaves in parts, continue to beat the sauce. Taste and add more salt or pepper if needed. Store prepared sauce in the refrigerator.

Lean mayonnaise – flourless recipe with peas

  • pea flakes or split peas – 1 tbsp. l
  • water – 6 tbsp. l
  • odorless vegetable oil – 180-220 g
  • salt – 1 tsp
  • ground black pepper – 0.5 tsp
  • sugar – 1 tsp
  • vinegar – 1-2 tbsp. l
  • mustard – 2-3 tsp

Pour pea flakes or peas with water and cook until tender, then beat with a blender until smooth. If necessary, add water – the mass should resemble thick sour cream. Cool, then put the peas out of the blender bowl and wash the container.

Pour in olive oil and lay out pea puree, observing the proportions: for 1 part of peas, 2 parts of oil. Add salt, sugar, pepper, mustard and vinegar. Beat again until smooth, check for taste – if desired, supplement the recipe with spices.
